The perfect summer cookies have to be these ice cream cone sugar cookies. They are a great addition to any ice cream party. But, on their own, they are a party themselves! Perfect any red, white, and blue celebration including, of course, Fourth of July or Bastille Day, you simply will make everyone happy with them.

Ice Cream Cookies

Easy to make with the kids. They call them the Patriotic Ice Cream Cookies and have become a July Fourth tradition. While they look like they are melting, this is one treat that will not! So take your time and indulge in them slowly and lazily, just like summer is meant to be!

The recipe looks long, but it is quite easy to make.

Cookie Dough – makes 30 cookies

Ingredients:

  • 1 cup of softened unsalted sweet cream butter
  • A large egg
  • 1.5 cup of powder sugar
  • 1 teaspoon of vanilla
  • 3 cups of flour
  • 1 teaspoon of almond extract
  • a pinch of baking soda
  • 1 teaspoon of cream of tartar
  • Cookie cutter: Ice cream cone

Directions:

  1. Preheat oven to 350 degrees.
  2. Line cookie sheet with parchment paper.
  3. Mix the butter, powdered sugar, vanilla, almond extract, and egg and mix until you obtain a creamy texture.
  4. In a large bowl combine the flour, baking soda, and cream of tartar.
  5. Gradually mix in the flour mixture into the wet ingredients until combined.
  6. Next, lightly flour a cutting board and begin to knead the dough until the dough is smooth
  7. Roll the dough out to 1/4 inch thick
  8. With the cookie cutter cut out the shapes and place onto the cookie sheet about 1 inch apart
  9. Bake in the oven for 8 minutes
  10. Pull out of the oven and cool completely

Royal Icing

Ingredients:

  • 3 egg whites
  • 2 cups of powder sugar
  • 1.5 teaspoons of cream of tartar
  • 4 piping bags fitted with the number 2 tip
  • 1 teaspoon of vanilla extract
  • 4 Squeeze bottles for the thinned icing
  • Sky Blue, Brown, and Red gel food coloring
  • 4 bowls to mix the colors in

Directions:

  1. Combine the powder sugar, egg whites, cream of tartar and vanilla and mix on medium speed
  2. If the royal icing is still a yellow soup, add in 1/2 C powder sugar
  3. Continue to mix until you get stiff peaks
  4. Evenly divide the icing into the four bowls,
  5. Add a few drops of Brown into the first bowl and mix until combined. You want a light shade of brown coloring for the cones.
  6. On the second bowl mix a few drops of the sky.
  7. The third bowl gets Red gel coloring.
  8. Leave the icing in the fourth bowl white
  9. Scoop the about 1/4 cup of icings into their own piping bags
  10. Add 1 tablespoon of water into the icing bowls and mix until combined. This helps thin out the icings.
  11. Pour icings into their own squeeze bottles.
  12. With the brown piping bag, pipe the outlines of the ice cream cones.
  13. Pipe out criss-cross lines onto the ice cream cone
  14. Use the thinned brown icing to fill in the openings on the cone
  15. Carefully tip over the cookie over a bowl so that excess brown icing can drip off of the cookie. You can also lightly tap the cookie.
  16. Let the cookie dry for one hour before piping on the next part.
  17. Use the blue icing, and pipe an oval outline with ice cream dripping.
  18. Fill in with the thinned blue icing.
  19. Let sit to dry for 1 hour
  20. Repeat the steps with the white icing
  21. Once the white has slightly dried
  22. Do the same with the red icing.
  23. Once the red part is filled in with the thinned icing, let the cookie sit for about 30 minutes.
  24. Sprinkle some patriotic sprinkles onto the red part of the cookies
  25. Let cookies completely dry for a few hours before enjoying!

Ice Cream Party For the Win

What we do is that we bake extra plain ice cream cone sugar cookies to use as the bottom of the sandwich and only decorate the top part.
