Ingredients
- 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
- 2 tbsp 2 tbsp olive oil
- ½ lb 220 g halloumi cheese, diced into small cubes
- 2 (2¼ lbs) 2 (1 kg) eggplant, diced
- salt and pepper
- 4 4 large egglarge eggs
- 1 tbsp 1 tbsp butter
- ½ tsp ½ tsp Worcestershire sauce (optional)

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Fry the onion in olive oil over medium heat until soft.
Add halloumi cheese and eggplant and fry until everything is golden brown. Season to taste with salt and pepper.
Fry the eggs to your liking in a different pan. Serve with a few drops of Worcestershire sauce if you like.
Tip!
Choose small or medium-sized eggplants — they have much better flavor than the larger ones!

What is Halloumi Cheese?? What can I use in its place?? Is Liver a good meat to eat, for us in the South (USA) we like it for breakfast. Mine, now is cauliflower grits, eggs, and Liver and onions

Hello!
Halloumi cheese is a Cypriot semi-hard, unripened brined cheese made from a mixture of goat's and sheep's milk, and sometimes also cow's milk. It has a high melting point and so can easily be fried or grilled. Halloumi is set with rennet and is unusual in that no acid or acid-producing bacterium is used in its preparation.
About the Liver, I saw on a website that Chicken liver is allowed but really not sure. I would just steer away from it just to be sure. On Diet Doctor, if you look for it on the menu bar, he has posted what you can or can't eat.
Hope to have helped you! This diet is great if you stick to it and don't go over board on the meats. I lost 15 lbs in 1 week. You can too ?3

Thank you for your reply in advanceYes, each serving would be considered a meal. However, if you find you're still hungry after one serving, it's OK to eat more as needed.

Thanks for the great recipe! Didn't make any changes, but think you could add other veggies and/or diced meats if you wanted. It was really good and a nice change from the typical eggs and bacon breakfast.
